Overview

The municipality of Florencia is in Cauca Department. It was founded on 17 December 1535 by Sebastian de Belalcazar and became a municipality in 1993.
The flag of Florencia is white with three diagonal stripes of green,yellow and red..

"On 25 January 1995, the Municipal Council of Florencia adopted the municipal flag by Decree No 001, Articles 1, 2 and 3. The flag has the following characteristics:
- Shape: Rectangular.
- Colours: The flag shows the white, green, yellow and red colours, disposed as follows. White is the abckground of the flag, whlie red, yellow and green are placed, from top to bottom, over the background in separates stripes. Each colour has a meaning:
- White expresses the aspiration to peace that has always empowered the inhabitants of Florencia;
- Red represents the main product of the municipality, coffee [Ripe coffee berries are bright red to violet, depending on the varieties and the growing conditions, IS], and the unconditional effort of the inhabitants to reach their objectives;
- Yellow represents the plantations of "caña panelera", the abundance in natural resources, the richness of the municipality represented by the human values;
- Green symbolizes fauna and flora, vital components of the municipal life."
The "caña panelera" is the cane used to produce "panela", representing 61% of the Colombian cane acreages (total, 240,000 ha), vs 32% for sugar production (sugar cane). Half of the "caña panelera" acreages are located in the departments of Santander, Boyacá and Cundinamarca. The Andes and their valleys are the most suitable areas for production, representing 90% of the national acreages.
The FAO defines "panela", a.k.a "chancaca" and "papelón", as "non- centrifugated sugar". Commercially, the product is sold as "natural brown sugar". Colombia is the second larger world producer after India and the world largest consumer (32 kg per capita per year). For more details see the FAO report.
